Pickled Beetroot, It’s prime function was to colour Mum’s potato salad pink! I used to hate it! It was far too sweet for me and seemed to have no real taste?
Boiling beetroot in a pot for hours just seemed wrong to us. Where would all the flavour, vitamins and colour go? So we decided to dry roast the washed beetroot in the oven, it takes a couple of hours, then when it’s cooled enough to handle we peel and slice it by hand.
Well regarding the taste, we have changed that, by adding herbs and spices. We now have an ideal condiment to go with a whole range of menus. These roasted pickled beetroot slices have been subtly enhanced giving it the ideal taste to zing up your favourite dish. And they are full of natural flavour and goodness, as we have not boiled it all away. One taste and you will be a convert.
