Top Rump, or thick flank or bed of beef depending on the area of the country you are from is a versatile cut of beef and can be used as a traditional roast or a slow pot roast and is very good for frying/braising or even on a BBQ.Taken from the hindquarter this is a large, lean, boneless cut of meat with little marbling and a fine-grained texture (marbling is streaks of fat that run through the leaner parts of the muscle).
